Meatball Sub on a Stick


     A couple of weeks ago my husband found a recipe for "Meatball Sub on a Stick" that was going around facebook.  He told me about it so I went looking online for it.  I found it at a blog called, Cookies & Cups.  



Ingredients:  

1.25 Lean ground turkey
1/2 C Italian bread crumbs
1/2 C Grated parmesan cheese
1 Tbsp dried Oregano
1 Tbsp dried Basil
2 cloves minced Garlic
1 can Pillsbury original breadsticks (I couldn't find it anywhere.  Both Kroger and Walmart didn't sell it.  It was finally found at Marsh)
1 cup shredded Mozzarella cheese
12 wooden skewers
Marinara sauce for dipping

Directions:  This is actually super easy, just slightly time consuming.  

1.  Preheat oven to 375 degrees
2.  Mix turkey, bread crumbs, parmesan cheese, oregano, basil, and garlic together.  


3.  Form into 1 inch balls.  You want to have 36 balls.  (3 balls on each of the 12 skewers)


4.  Separate the breadsticks from the can.  Take one breadstick, stick the end on the skewer, add a ball, and continue to do this, so they look like the picture below. 


5.  Bake in the oven for about 20 - 25 minutes, or until the meatballs are done.  I had to flip them half way through so that each side got browned evenly.  Take them out, generously sprinkle the mozzarella onto them, and put back in the oven for about 2 minutes, just enough for the cheese to melt.  



     Take them out and let them cool slightly.  Serve with Marinara sauce for dipping. 

     My whole family ate these up quick.  I have picky eaters, so finding a dinner everyone likes is always a plus!  I promise you won't be disappointed when you eat them!
