Meatloaf Your Whole Family Will Love


I'm not huge into writing up recipes mainly because there are so many out there written by people who cook for a living, and also, because I don't usually use exact measurements when I cook for my family.  This meatloaf is a game changer though, and I wanted to share it with the world.

This meatloaf is loved by everyone in my family, and has been one of the go to meals for many years now.  I think I saw a recipe online a few years ago, that spurred the recipe that I use now.  The secret ingredient:

WHAT??

Brown sugar in meatloaf??  Yes!!  It's amazing.  And once you tell your kids, "Eat your meat, I put sugar in it", there's no turning back for them!   Maybe I've just lived under a rock my whole life, but I've never heard of putting brown sugar in meatloaf, have you?  I was skeptical at first, but I will try almost anything to get my kids to eat their dinners.  If I have to put sugar in it, then so be it.  Yes, it might not be the healthiest, but you know what?  They are getting their protein in them right?  And it's delicious!  So add some broccoli, or a salad with it, to even it out a bit.  But, you must try this recipe, like tonight, like now!

Ok, enough of me rambling, let's first start with the ingredients.

You will need

  • 2 lbs ground hamburger
  • 1.5 Cups of Bread crumbs (I use Italian or Garlic and Herb)
  • 2 Eggs (I use liquid, but the regular 'ol shell kind will work too)
  • 2 Tbsp Oregeno
  • 1 Tbsp Garlic power
  • 2 Tsp Onion powder 
  • 12 Tbsp Light brown sugar
  • 1/8 Cup Ketchup (I really don't know this measurement as I just squeeze it on - See picture)
  • Optional - I sometimes put it red peppers and/or onions chopped up real small also
  • Wilton Mini Loaf Pan
This makes 6 Mini Meatloaves - and don't ask me the calories, because I have no idea!


Directions

1.  Preheat the oven to 375. 


2.  Throw the 2lbs of ground meat into a big mixing bowl.


3.  Add in the bread crumbs, eggs and seasonings.  


4.  Here's the messy part, with your clean hands, get in there and mix all the ingredients together.  


5.  Form 6 evenly sized balls.  


6.  Spray your Wilton Loaf Pan


7.  Here's the best part: in each loaf section, put about 1-2 Tbsp of brown sugar in the bottom and press down.  It should just cover the the base.  




8.  Squeeze some ketchup in each section. 


9.  Now take each ball, and somewhat form it into a rectangle, put it in the pan.  Some of the ketchup will push up, but that's okay because you want it to cook all through it.  The loaves will shrink as they cook, so it's okay that they are popping out of the top.  


10.  Bake in the oven for about 50 minutes.  I usually take it out at around 40 minutes, and cut a slit in the top to see how much longer it needs.  You can kind of see that each loaf leaves some sugar/ketchup juices on the bottom.  This liquid is good to pour over the top as well!  


11.  Enjoy with a side.  I like to serve it with my Roasted Lemon Garlic Broccoli.  



That's it.  Pretty simple!  It may not look the prettiest or fanciest, but believe me when I say it's so tasty.  Let me know if you make it and what you think of it.

    2. I cannot wait to try this with my kid's! Lately I've become discouraged with meals because of everyone's different tastes. But they all love sugar AND hamburger is on sale! It's a win win!
